Mini Charcuterie Boards

Charcuterie displays have long been popular for meetings and events, and Sarabeth Quattlebaum, of Sarabeth Events, didn’t let the pandemic kick them off the menu. Her mini charcuterie boards offer a single-serve portion and are a hit with guests.

 

Raspberry Mouse

Atlanta’s Proof of the Pudding raspberry mousse is a dessert that no one wants to miss. The individual raspberry mousse cup is topped with a raspberry macaron, Chantilly cream, white chocolate crust, and raspberry dust.

Shrimp and Grits

Shrimp and grits is a Southern staple, and Nashville’s Chef’s Market created a single serve option that makes the dish a great hors d’oeuvre option that can be picked up or passed around the room.

Dessert Sampler

The dessert buffet is a highlight for many meeting and event guests, and Chef’s Market has found a creative way to keep the dessert samplings going with their individual dessert boxes. Each box includes a strawberries and cream whoopie pie, flourless chocolate tarte bite, crème brulee tartlet, and cheesecake lollipop.

Reimagined Box Lunches

Royal Fig Catering in Austin, Tex., is known for its farm-to-table offerings, and the company has brought an elevated approach to the basic boxed lunch. The catering grab-and-go meals include upscale, fresh, and colorful menu items, including smoked salmon, mini biscuits, and beet hummus. Planners can select from a variety of options based on their specific price point.

‘No Time To Siesta’ Box

The Texas A&M Hotel and Conference Center created easy break-time boxes for guests at meetings and events that also speak to the local culture. The ‘No Time To Siesta’ box includes house-made tortilla chips, homemade salsa, fresh guacamole, churros with chocolate dip, and a Topo Chico.

Charred Pineapple and Jalapeño Margarita

Peninsula Events, A PPHG Signature Service, created these adorable (and individual) cocktails in a pouch for their charred pineapple and jalapeño margaritas.

Single-Size Beet Verrine

Single-size beet verrine is elevated to an incredible artform thanks to Wolfgang Puck Catering. The individual dish features frozen beets, ginger milk curd, yuzu, and ice lettuce.

Bitty Boxes

Baton Rouge’s Bites & Boards offers Bitty Boxes, which are beautifully filled with two or three cheese selections, one or two charcuterie meats, a jelly or dip, crackers, various dried and fresh fruit, and a sweet little treat. The boxes make for a great snack mid-meeting or shipment to virtual attendees.

Elegant Small Packages

Charleston’s Bouquets and Bowties shows that the most delicious things come in the smallest packages. This clever dish includes a smoked salmon spread on a potato waffle with smoked salmon and chive spread, and Panzanella basil pesto on sourdough with tomato, mozzarella, and shallot.
